I regard cold, cooked chicken as the reward for roasting one in the first place. Indeed, I often roast a larger-than-needed chicken just so I have the luxury of picking from it in the days ahead. If used thoughtfully, a whole chicken can feed two people at least three times – four, if you can be bothered to make a soup with the bones. Far from austere and depressing, these are leftovers I really want to eat.
Chicken pie is the perineal classic use for leftover chicken. My chicken, bacon and leek pie is perfect for those colder months. You can even throw in any leftover gravy, too.
Cold chicken – particularly the drumsticks, thighs and wings – needs nothing more than a really good salad. Try my antipasti salad or Tuscan bread salad – two Italian-inspired salads that offer fresh flavours, year-round.
