No Notice Nibbles: Halloumi with Honey and Thyme

A sealed packet of halloumi lasts for ages in the fridge, so if you’ve got thyme growing and a bottle of honey kicking around, you can knock up a beautiful nibble at a moment’s notice.

Ingredients

1 x 225g packet halloumi cheese

3 – 4 sprigs of thyme

Drizzle of honey

Method:

Preheat a non-stick frying pan over medium heat.

Slice the block of halloumi into 8 slices. Place the slices gently in the dry, preheated frying pan and let them fry until nicely coloured on one side. Don’t be tempted to flip too soon or move them about too often. When the cheese is a nice golden brown, flip over and strip the thyme leaves over the pan, discarding the stems. When the halloumi has nicely coloured on the other side, drizzle over some honey – a heaped teaspoon or so – and shake the pan around to coat. Immediately transfer to a serving dish. Serve.
