Apple Porridge

Filling, warm and very good for you – what a great way to start the day!

It may seem like a lot of water, but the pectin in the apple really thickens the porridge after a couple minutes of sitting.

Makes 2 big bowls

Ingredients

1 cup rolled porridge oats

2 small apples

3 cups water

Small pinch of salt

Pinch of cinnamon

1/2 cup milk

Drizzle of maple syrup or honey

Method:
Using the coarse side of a box grater, grate the apples, skin and all, but leave the core intact. Add the grated apples to a deep saucepan with the oats, water, salt and cinnamon. Bring to a boil, stirring occasionally. Once bubbling, turn the heat down to low and cook until thickened. Add the milk, turn the heat off and put the lid on. Let sit for two minutes then ladle into bowls. Drizzle with maple syrup or honey, to taste.
