No Notice Nibbles: Garlic Croutons with Sun-Dried Tomatoes

Stale bread and a jar of sun-dried tomatoes are the stand-by heroes of this party snack. Use rustic, good quality bread for best results. 

Feeds 4 as a nibble with drinks

Ingredients

Stale, good quality bread (about 1/4 of a loaf), cut into bite-sized cubes

Olive oil

2 cloves garlic

Salt and pepper

4 – 5 sun-dried tomatoes packed in oil, sliced into strips with scissors

Method:

Peel the garlic cloves and squash with the back of a knife, then add to a cold frying pan. Add a glug of olive oil (err on the generous side but don’t go crazy – 2 tbsp should do it) and turn the heat on to medium. When the garlic starts to sizzle, remove the garlic cloves and discard. Add the cubes of bread, the sliced sun-dried tomatoes, a generous pinch of salt and a grinding of pepper. Toss everything around and cook about 5 minutes, tossing and shaking often, until the cubes are lightly golden and crisp. Transfer to a small bowl and serve immediately, with drinks.
