Pita Croutons

Described as “life changing”, “a revelation”, and “always a good time” by those who have tried them, pita croutons are the ingredient that’s been missing from your salads.

You might be thinking, what’s the difference between this and a regular crouton? The answer is, not much, but somehow these are different, and better. I first had pita croutons in a fattoush salad and couldn’t leave it there. They belong almost anywhere but are particularly good in a leafy Greek-ish salad. Try it and see for yourself.

All you need to do is slice a few pita breads into small triangles, drizzle with olive oil and sprinkle very generously with flaked sea salt. Bake in the oven until golden, turning occasionally. Allow to cool, then add to your salad of choice.
