
A no-notice dessert loved by children and adults, alike.
Feeds 4 – 6
Ingredients
250g frozen mixed berries
1/4 cup sugar
1/2 tsp vanilla extract
2 tbsp water
1 tsp cornstarch (corn flour) dissolved in a little water
Method:
Chop any large fruit in halves or quarters, then combine all the ingredients except the dissolved cornstarch in a saucepan. Bring to a boil, then turn down the heat to medium and cook for a couple of minutes. Next add the dissolved cornstarch and cook for a further minute or two, until the compote is glossy and the consistency of hot jam (if you’ve made jam before you’ll know what this looks like – if not, just wait until it’s slightly thickened). Turn off the heat and leave to cool. Serve with vanilla ice cream.
