A heavy scattering of herbs gives this salad a distinctly Eastern Mediterranean vibe. Eat alongside grilled meats, a roast chicken or spiced lamb for a fresh and vibrant side dish.
1 cucumber, quartered lengthwise and chopped
1 x 330g packet cherry tomatoes, halved
1 small red onion, finely diced
Juice of half a lemon
1 tbsp olive oil
Salt and pepper
1 large handful of parsley, chopped
1 large handful of mint, chopped
In a large bowl, combine the chopped cucumber, halved cherry tomatoes and diced red onion. Squeeze over the lemon, drizzle in the olive oil and season with salt and pepper. Toss well.
Make ahead: Salad can be prepared up to 1 hour in advance. Keep at room temperature.
Just before serving, sprinkle over most of the chopped parsley and mint and toss. Sprinkle the remaining herbs over the top and serve immediately.
