
A festive snack that will get people talking. Larger parsnips are better for this than thinner ones, as you’re going for as much surface area as possible with your peelings.
Feeds 2 – 4 as a nibble
Ingredients
1 large parsnip
1 tsp garam masala spice mix
1 – 2 tsp olive oil
Salt and pepper
Method:
Preheat the oven to 350F / 180C / 160C Fan.
Using a vegetable peeler, peel down the length of the parsnip to get ribbons. Keep going on one side until you’ve almost reached the centre, then turn over and peel down the other side. Place the parsnip ribbons in a bowl and sprinkle over the garam masala, olive oil, salt and pepper and give everything a mix with your hands.
Place the parsnips in a single layer on a baking tray. Sprinkle over a little more salt and bake in the oven for 15 – 20 minutes, flipping once, until the parsnips are golden and crisp. Let cool for a couple minutes on the baking tray, then serve. These look lovely in a giant pile on a board, or stand them up in glasses or champagne flutes for a festive presentation.
