Charred Courgettes with Feta and Mint

A summery side to go with any BBQ. Try alongside my lamb burgers for something a little different next time you fire up the grill.

Ingredients

4 medium courgettes (zucchini)

Extra virgin olive oil

Salt and pepper

1/2 lemon

100g feta cheese

2 heaped tbsp chopped mint

Method:

Preheat a BBQ or griddle pan over a high heat.

Trim the ends off the courgettes and slice in half lengthwise. Use a pastry brush to lightly brush each side with olive oil, then season with salt and pepper. BBQ or griddle until dark char marks form, and the courgette has begun to soften.

Transfer the courgette to a chopping board, then slice at an angle into chunks. Place the sliced courgette on a platter, then drizzle over a little extra virgin olive oil, the juice from half a lemon, crumble over the feta, then finally sprinkle over the chopped mint. Serve warm or room temperature.
